The KITCHEN KNIGHT II Restaurant Fire Suppression System, manufactured by Pyro-Chem (a Johnson Controls brand), is a pre-engineered automatic fire extinguishing system engineered specifically for commercial, institutional, and industrial food service facilities. Designed to mitigate high-hazard Class K grease and oil fires, the system provides targeted protection for ventilating equipment (hoods, plenums, exhaust ducts, and grease filters) as well as cooking appliances including deep fryers, griddles, range tops, charbroilers, and woks. The system operates by deploying a specialized potassium carbonate-based wet chemical solution stored under pressure. Upon thermal detection via fusible alloy links or manual actuation, the system discharges fine chemical droplets that rapidly knock down flames, cool hot surfaces below auto-ignition temperatures, and react with hot grease to create a saponification foam blanket that prevents reflash. Built for simplified installation and maintenance, it features unbalanced piping network configurations, flexible agent distribution hoses for castered appliances, automatic fuel shut-off interlocks, and full UL 300, NFPA 17A, and NFPA 96 listings.
